This is a second marriage for both of us. How do we word the
invitations mentioning both parents as my mom is a widow and his mom is a single mom? HELP!!!

Parents aren't usually mentioned on an encore wedding invitation. But, if you'd wish to, add their names under yours as: daughter of ...and son of... . If this is an informal wedding, you could use their first names: Jane Doe. If not, then you could use Ms. Jane Doe. If you are in a region where Mrs. is still used for widows (this isn't done much any more after a certain amount of time has passed--there is a lot of wiggle room when it comes to how much time is appropriate) then you would use Mrs. as the title for your mother.
If you want to mention your mothers as hosts, then their names would be listed first, just as any other wedding invitation. But, this isn't normally done for encore weddings. You would be expected to host this.
