We just received our first gift in the mail and it's seven weeks before the wedding. Having eloped my first time, I'm not sure of the etiquette of thank you notes. I want the sender to know it arrived safely, but both my fiance and I don't want to open it until closer to the wedding. I don't know the woman at all; she's a long-distance work associate of my fiance's. Should he just let her know it arrived but that we're going to wait to open it?
Also, generally speaking, is it okay to write and send thank you notes before the actual wedding? Thanks!

You can go ahead and open the gift and actually you should open it to make sure it's all in once piece and nothing is damaged. Just don't use any gifts until after the wedding.
It's not only OK to send the thank you notes before the wedding but it is proper to do so. After all, as you mentioned, the sender will want to know the gift arrived safely.
